Mornings at Elysium begin at Terrazza, where espresso is pulled with Italian precision and a generous buffet showcases the region’s finest produce. Seasonal whole fruits sit alongside freshly baked pastries from Pavoni’s cart – think flaky butter croissants, danishes and muffins. Artisan loaves from local bakeries Tanglewood and Rick’s arrive daily: wholemeal sourdough, dark rye, multigrain studded with seeds.

Healthy bowls feature chia coconut pudding with passionfruit; bircher muesli with almond meal; and homemade granola with berry purée. Signature juices include Coastal Glow (mango, pineapple, ginger, coconut water) and Hinterland Green Reviver (spinach, cucumber, avocado, green apple). The egg station works to order: poached, scrambled, or folded into omelettes with chorizo, mushrooms, or fresh herbs.

The hot buffet delivers Eumundi Butcher’s sausages, crisp bacon, golden hash browns, slow-roasted tomatoes, and buttermilk pancakes with maple syrup. Chef’s signatures include mini shakshuka pots with dukkha and feta, and marinated local lamb cutlets with Noosa black garlic.
